My first rack of lamb!!! Crossing over to preparing more gourmet dishes this 2014!!! One of my food blogging goals this year is to prepare more meats and gourmet meals! My dad usually prepares it, but he wanted to try something new and allowed me to take hold of the rack this time! It turned out surprisingly delicious and we all finger licked it all! I love how no fork and knife is required for a rack of lamb – just good old gnawing. The chimichurri sauce really balances the strong lamb flavor and adds a good garlic and lemon spicy kick to it all. Give it a try!

Baked Spaghetti Squash with Crispy Kale!
I have got quite a few cheers and inquiries on the spaghetti squash ‘pasta’ I made last week!!! Roasted spaghetti squash is a great substitute for carby pasta and to get your daily veggie intake. One squash is about 4 servings, which is quite a lot for about $2.29! You can also throw it into chicken soup if you would like! It really is versatile and so good – get them while they are in season!!!
Roasted Brussels Sprouts Tossed with Cilantro, Mint, and Red Chilis
Recently I have discovered the art of roasting vegetables and how it gives it a subtle smoky, charred flavor to it. It’s SOOOO EASY!!! You just toss the veggies, ANY kind of veggies, with olive oil and some pepper, stick it into a 375-425 deg oven, and let it roast until it’s brown! It is easy for a quick meal and you can store roasted veggies for a few days in the fridge too! Toss the veggies with some garnishes or sauce and you have a fancy side dish! It’s awesome. And I think you should try it out, and maybe make a beautiful roasted veggie side dish for Thanksgiving!
Pad Thai!!!
Delicious delicious pad thai! My favorite thai dish!!! Despite my love for food, I don’t eat coconut and eat things if coconut milk is used sparingly. However, that all changed when I went to Portland!!! Portland has such delicious food and for so cheap. There are food carts all over the city, and cute little restaurants line each district. It is truly amazing how small town it feels, no matter where in Portland you go. Most businesses are family owned, with unique offerings from food to houseware. They have so many of these local businesses that its really hard to find a chain store around Portland. I LOVED IT. I highly recommend anyone to go- I am already thinking about my next trip to Portland! Here are some lovely fall pics from Portland!
Turkey White Bean Pumpkin Chili!
Soooo I am going to PORTLAND this weekend!!! SOO excited! Anyone have any good suggestions on places to go/eat?! I am totally guilty of procrastination and have a large 20 page paper looming over me that I haven’t started. Oops. It doesn’t help when Halloween is fast approaching and since this weekend I am celebrating it 2 weekends in a row, ain’t nobody got time for a paper! hahah It started raining today in SD and so I wanted something thick and warm and with pumpkin. Ahh the clouds have settled in. I am freezing cold. My body hates me. I need to recuperate. And fast because Halloween is fast approaching! I am so excited this year!!! Even though my favorite Halloween has got to be Halloween 2011 where I spent one night in Vegas with the girls and had an amazing time hahaha. Also because I made my favorite costume. normally I don’t like Halloween- it comes at such an inconvenient time, especially when you are in school, this is when shit gets real, the holidays are fast approaching, deadlines come and go, and finals are creepin. This year I plan to go to A&B Halloween Therapy and then straight to Portland for a weekend trip with the best friend. This year, I plan to be a cat, a rose, and a mermaid. Although I am not excited about my costume choices this year, the memories I will make this Halloween weekend (2 weekends hell yah!) will be worth it. Hehe I will do a Halloween costume post later. 🙂 What are your plans for Halloween?
Soy Ginger Scallion Turkey Meatballs
I’ve never really played with ground turkey because I prefer beef and pork. But I came across this recipe and couldn’t help but try it out! Ground turkey has much less fat than ground beef so a lot of people use it as an alternative to beef in things like bolognese and meatballs. I think this recipe is perfect for an appetizer or a quick snack or dinner. So tasty and addicting!
Chicken Alfredo with Bowties
I was carbo-loading for my big run yesterday all last week! I had pasta everyday and welp I think it helped with my energy levels on race day. I have no idea if there is any scientific truth to it, but I mean I felt good running and had the best race and mileage time in my life! So exciting!
