Spicy Sriracha Chicken Wings

I am increasingly bothered by the lack of Thanksgiving this year. Before we even crossed Halloween this year, news articles started talking about Christmas – whether it was retailers focused on this Christmas shopping, or food news articles skipping the Turkey, and going straight to Christmas cookies and yule logs. Starbucks has even stopped serving “Thanksgiving” blend before Thanksgiving even started! They’ve moved onto “Christmas” dark and blonde blends. Thanksgiving has not happened people!!!!!! What happened to the Thanksgiving that we Americans have celebrated since we were pilgrims? I am afraid to ask what they teach kids in elementary school right now – do they still have a craft day where we made turkeys by tracing our hand on construction paper? Do they have dress up day where kids dressed as pilgrims or silly turkeys? I sure had that in my childhood and it engrained in me the importance of Thanksgiving. Why are we in such a rush to Christmas? Why are we in such a rush to end the year? Does it have anything to do with all the horrific things we encounter in the world that we just want to turn the page and look to the future? Well my take on it is why don’t we just slow the way down, hug our families and friends when the world is so crazy, cherish those moments where we gather around and eat turkey and cranberry and stuffing, and embrace the spirit of the holidays.

Last night, I was able to do so with some of my friends for Friendsgiving. I am thankful for those times where we can get together, eat, laugh, be ourselves, when we are apart for most of the year. These moments occur less and less after we place ourselves in the real world. All the more important to get together and spend quality time with each other! I made these spicy sriracha chicken wings for the dinner and I am so happy with the results!

I challenge you to skip the Peppermint Mocha at the moment, and enjoy a Pumpkin Spice Latte until Thanksgiving is over.

Oven “Fried” Chicken!

Mmmmm finally my 3 week long craving is satisfied! This recipe is awesomely easy and delicious and cheap. It’s a quick way to get your fried chicken fix. And it doesn’t involve any oil for frying – basically a bit healthier than restaurants. The flavor doesn’t disappoint either. Try it today! I guarantee it doesn’t disappoint!

Chicken Tikka Masala!

I don’t live anywhere near Punjabi Tandoor (hole in the wall Indian place in Miramar] anymore so I don’t get my Indian fix every once in awhile. In fact, I haven’t had Indian food for like a year now and was eager to make some to cure my craving! As much as I love healthy food, I love heavy creamy foods too sometimes. I have made chicken tikka masala a lot before, but I never got the orange hue like the restaurants. I figured out my problem- I was using canned diced tomatoes, or I wanted to be healthy so I substituted heavy cream with normal milk, or added too much spices. But this time, I followed a great All Recipes recipe and even bought canned tomato sauce (not canned diced tomatoes) and it turned out perfectly! It tastes just like the restaurants and I am so proud! I don’t have a grill so I don’t grill the chicken like you are supposed to, but since the chicken is drowned in sauce, it doesn’t really matter. I totally love it and am so excited to share it with you!!!

An Endive Flower (Modified Chicken Lettuce Wraps)!

Today was a good day! I went back to Club Pilates and did a session and basically did not know what I was doing since I haven’t gone since August and they added a bunch of new and cool stuff! Like the stretchy bar thing along the walls for sit-ups, the big stepping stool thing that some people need to use the balancing stick for, new exercises like planking on the bouncy ball thing, and new teachers! I was off to a bad start when my hair tie broke on my way there so my long hair was all over my face and eyes as I was doing on the exercises. I totally made it a point to talk to the teacher after to make sure she didnt think I was an amateur in a Level 2 class hahah But it was really fun and I enjoyed all the new exercises. I still hate planking though but I really should do it more often! After pilates, I went to LF for their sale and emerged with 6 sweaters and a flannel. I love their winter sales more than the summer sales- last winter, I got a bunch of my favorite pieces during it, also spending like $150+. Good thing tomorrow it is supposed to rain in SD so I can hopefully wear my new chunky sweaters! But mostly I know these sweaters are for SF weather when I am finally back. Look at my haul!

Chicken Noodle Soup!!!

Ahh the clouds have settled in. I am freezing cold. My body hates me. I need to recuperate. And fast because Halloween is fast approaching! I am so excited this year!!! Even though my favorite Halloween has got to be Halloween 2011 where I spent one night in Vegas with the girls and had an amazing time hahaha. Also because I made my favorite costume. normally I don’t like Halloween- it comes at such an inconvenient time, especially when you are in school, this is when shit gets real, the holidays are fast approaching, deadlines come and go, and finals are creepin. This year I plan to go to A&B Halloween Therapy and then straight to Portland for a weekend trip with the best friend. This year, I plan to be a cat, a rose, and a mermaid. Although I am not excited about my costume choices this year, the memories I will make this Halloween weekend (2 weekends hell yah!) will be worth it. Hehe I will do a Halloween costume post later. 🙂 What are your plans for Halloween?

Chicken Alfredo with Bowties

I was carbo-loading for my big run yesterday all last week! I had pasta everyday and welp I think it helped with my energy levels on race day. I have no idea if there is any scientific truth to it, but I mean I felt good running and had the best race and mileage time in my life! So exciting! Chicken Veggie Wrap

This is another treat I discovered at OB People’s Market…a local heaven for vegetarians and vegans! And carnivores like me who love veggies in her life! I like how light this wrap is and packed with veggies. With the right sauces, such as Cilantro&Chive Yogurt Dip and Tahini with the chicken, it keeps this wrap fresh and delightful! I ate this prior to my first 5k!!! The Color Run!!! And felt the energy from it without feeling weighed down. Perfect!

Chicken Pho (Pho Ga), Turtle Tower Way!

I frequently claim I don’t like pho- which is true most of the time. When I am forced to go, I usually order chicken pho because I like the broth slightly better than the beef one. However, one of the main reasons I don’t like it is pho noodles. I just don’t like the texture or the weird after taste of them. But when I had Turtle Tower for the first time, it changed my life! Apparently they are more of a Northern style pho, with fresh flat noodles instead of the dried skinny ones. Fresh flat noodles are similar to Chinese chow fun noodles, which I grew up eating anyway. And Turtle Tower’s broth is similar to plain chicken soup, which is perfect for the soul. So when I became sick, I immediately craved the TT chicken pho, but obviously I can’t get it here because no Viet place in SD serves it like TT does. So I set out to make my own. I have heard stories about the broth being cooked for hours, sometimes even all day to achieve that delicious broth. And believe me, after making it, that’s very much true! Time is essential in creating this broth. I suggest making it at night, and letting the chicken simmer for hours into the night, when you sleep. Therefore, the next day at lunch, you can have a hot bowl of pho! 🙂 I have to say that this recipe’s broth actually comes pretty close to the taste of TT. You can always adjust the salt (or msg) if you want :). Happy eating!

Chicken with White Wine Mushroom and Thyme Sauce!

So I went to Costco and bought a huge bag of chicken so you will be seeing quite a bit of chicken posts in the future. I normally eat chicken when I am away from Lodi; for some reason its just more versatile than slices of flank steak. Anyhoots, already 2 days into my skinny grind I was already bored with my chicken over salad thing. I was like well, why not treat myself the night before Vegas this weekend with a simple, yet sophisticated meal. Obviously in prep for this not so sophisticated weekend lol. Anyway, the white wine mushroom sauce is very simple to make. It comes out tasting like what you would eat at restaurants. So for those of you with the itch to go out to eat, whip this up and it will taste gourmet!
