An Endive Flower (Modified Chicken Lettuce Wraps)!

Today was a good day! I went back to Club Pilates and did a session and basically did not know what I was doing since I haven’t gone since August and they added a bunch of new and cool stuff! Like the stretchy bar thing along the walls for sit-ups, the big stepping stool thing that some people need to use the balancing stick for, new exercises like planking on the bouncy ball thing, and new teachers! I was off to a bad start when my hair tie broke on my way there so my long hair was all over my face and eyes as I was doing on the exercises. I totally made it a point to talk to the teacher after to make sure she didnt think I was an amateur in a Level 2 class hahah But it was really fun and I enjoyed all the new exercises. I still hate planking though but I really should do it more often! After pilates, I went to LF for their sale and emerged with 6 sweaters and a flannel. I love their winter sales more than the summer sales- last winter, I got a bunch of my favorite pieces during it, also spending like $150+. Good thing tomorrow it is supposed to rain in SD so I can hopefully wear my new chunky sweaters! But mostly I know these sweaters are for SF weather when I am finally back. Look at my haul!

New fitness goal: I plan to start walking Fiesta Island (2.5 miles) with my 5 pound weights to work out my arms. Over the weekend, I went to an 80s Prom Party in LA and had the time of my life, but I also noticed my arms are basically jello and fat and untoned and ugly so I need to step up my game, so I plan to add a ton of arm exercises to my random fitness regimen nowadays. To achieve my newly found fitness goal, I am back on a mainly vegetable diet, with maybe one or two mini meals a day that include meat. I also have cracker cheese slices that I need to finish so I will snack on a max 2 slices a day hahah. Sometimes you go to the store hungry and end up buying anything and everything that sounds good at the time. I bought this cheese 2 weeks before my cleanse and I am still working on it :(. Anyway, I made some stir fried chicken with peanuts last night using my special stir fry sauce that I concocted!!! Instead of using lettuce, I ate it with Belgian Endives (and because the endives were so beautiful). I had endives at a Moroccan restaurant before and they had put some sort of mixture on top of them and served them as an appetizer. The veggie is slightly bitter, but has a nice crunch to it. It is full of vitamins A and K and has a ton of fiber. You can find them at Trader Joe’s! And if you can’t find them, plain old iceberg lettuce will do for the stir fried chicken.


4 chicken thighs, boneless & skinless, cut in small cubes
3 cloves garlic, minced
1/3 cup dry unsalted peanuts
stir fry sauce
olive oil

Put a Ring on Annie’s Special Stir Fry Sauce:

3 tbsp soy sauce
1.5 tbsp honey
2 tbsp dried chili paste (I used Trader Joe’s Dried Thai Chili Paste, but you can always use Chinese XO Sauce or something similar (think dry and chili paste) as well)
1 tbsp rice wine
1/2 tsp sesame oil

1. Mix together the soy sauce, honey, chili, rice wine, and sesame oil in a small bowl. Set aside.
2. In a large pan, heat up some olive oil on medium-high heat. Stir fry the chicken and garlic until it turns color.

3. Pour the peanuts and the sauce onto the pan and let the chicken cook, and the sauce simmer down until there is barely any sauce left. If you can’t chop chicken into small pieces like me, you can use this time to use your spatula and cut the chicken into smaller pieces.

4. Serve with endives or lettuce!
