The gourmet seared ahi tuna! I made this awhile ago but never shared the recipe. Everyone was so shocked about this because you know it’s expensive at restaurants so people think it’s super hard to make. Well guess what? It’s not!!! Please try it!!!! At home, you can have as much as your heart desires as opposed the 4 pieces you get on top of a salad at restaurants! Buy a fresh chunk of ahi tuna and sear away!!! It is super easy and perfect for summer!!!

Ultimate Open Faced Tuna Melt!

Hallelujah! We have been blessed with a few days of hot hot weather!!! I guess I used to be really sun obsessed, but lately I haven’t had much desire to lay out and brown my skin! I don’t know what it is! Maybe the talk about too much sun exposure and its consequences have finally gotten to me? Or maybe I realize how easily I tan (basically when I stand outside) and I don’t want to be too brown these days? Or maybe because I lived in SF over the summer and my body doesn’t like blazing hot sun directly on it? Seems pretty far off from the days where I thought 110 degree days were normal growing up hahah. Anyway, I finally brought myself and a friend over the weekend to lay out on the beach in the late afternoon and it was nice and breezy. It felt nice as opposed to baking in the sun. My body loves warmer weather and quickly deteriorates when its semi ‘cold(er)’- it really has a knack for getting sick when the weather changes :(. Since it was cold and rainy the past few weeks, I have been sick for the past few weeks. I am totally back on the grind with this warm weather- and I have been craving fish. Tuna fish. Strange I know. I don’t even like canned tuna that much. But I was craving a tuna fish sandwich all week so I decided to make one. Mmmm was it goooooood. A lot of you liked it on Instagram too. It is so easy to like spice up a boring tuna fish sandwich! See below!

Cauliflower Pizza!

Ahhhhh cauliflower pizza!!! The ideal and delicious low-carb pizza crust!!! If you want to make this bad boy, you gotta put in the effort though- this aint easy…First you have to grate the cauliflower (or shred using a food processor), wring out water, mix mix mix with other ingredients, etc. And then it ain’t even that healthy either- you replace the flour in normal pizza dough with extra cheese to make the cauliflower crust. BUT after all this work and extra fat calories, this cauliflower pizza is pretty damn good- eat it with a fork to avoid the mess! I ended up with a semi-non-soggy crust – the edges of the whole pizza were stable, but the middle part was a tad bit soggy. I refrigerated it for about 5 min and the crust firmed up quite a bit and was way less soggy after it cooled. I won’t be making it for a long time since there is so much extra work and it’s messy to wring out the water from the cauliflower. BUT Try it!!! I know many of you are super curious. Trust me, it is delicious!!!!!!!

Spam Musubi!

I have a test this Saturday called the MPRE, the Multistate Professional Responsibility Exam, and I barely started studying and have been sick this past week and a half. I needed something fast to grab and go and to eat in the library as I bury myself in books these next 2 days. Hence, the salty yet sweet Spam Musubi!!! It is basically like the Hawaiian sushi! I knew Hawaiians loved spam since they serve spam and eggs at McDonald’s over there. Spam Musubi became popular after WW2 because spam was the military troops’ food, and because there were a ton of Japanese and US troops in Hawaii at the time, the local Japanese created the spam musubi! Cool history lesson!

Chicken Tikka Masala!

I don’t live anywhere near Punjabi Tandoor (hole in the wall Indian place in Miramar] anymore so I don’t get my Indian fix every once in awhile. In fact, I haven’t had Indian food for like a year now and was eager to make some to cure my craving! As much as I love healthy food, I love heavy creamy foods too sometimes. I have made chicken tikka masala a lot before, but I never got the orange hue like the restaurants. I figured out my problem- I was using canned diced tomatoes, or I wanted to be healthy so I substituted heavy cream with normal milk, or added too much spices. But this time, I followed a great All Recipes recipe and even bought canned tomato sauce (not canned diced tomatoes) and it turned out perfectly! It tastes just like the restaurants and I am so proud! I don’t have a grill so I don’t grill the chicken like you are supposed to, but since the chicken is drowned in sauce, it doesn’t really matter. I totally love it and am so excited to share it with you!!!

Garlic Cauliflower Fried Rice!

Just came back from spring break and totally in the spring mode!!! I love spring as it is one step closer to summer!!! I usually buy a bunch of florals, pastels, and light clothing during this time and I am so excited for my haul today! I didn’t do much during this spring break (as opposed to the epicness of Miami last year) but I did get to go home and visit some friends! I also learned this past week that nothing in life is super set- i.e. jobs, relationships, family, friends, and legal troubles. But I do believe that when faced with those life events, trust that everything will work out the way it should and that what you think might be the greatest thing of all may not be and a better opportunity or blessings in disguise are on the other side of the tunnel. 🙂 Thoughts to keep one happy and grounded- especially since there is so much we still have to live and when we look back at how much we are freakin out now in 10 years, it will all be so silly to us. Anyway, this still means lots of time to get in shape and eat healthy and stay active for the rest of our lives!!! I have been obsessed with cauliflower recently, for example, Raw Cauliflower Tabbouleh and the Vegan Cauliflower “Alfredo” Sauce. There is so much we can do with this veggie!!! Today I made cauliflower fried “rice” and next time will be cauliflower pizza. So stoked! I am so happy everyone is just as excited about this veggie as I am!!!

The Soufflé Pancake!

If you like pancakes, but always slip into food coma after, this soufflé pancake is the right one for you! It is super light and fluffy but doesn’t compromise on the breakfast favorite. In fact, it is super interesting – I have never seen anything like it, unless you have been to Berkeley’s Bette’s Oceanview Diner! My sister has been talking about this place since she first went and have been trying to perfect the recipe for it. Because she did, I am sharing it with you! You can swap the bananas out for another type of fruit or just eat it plain with lots of maple syrup or raw honey. Such a treat!

Vegan Cauliflower "Alfredo"!!!

Words cannot describe how excited I am to share this recipe!!! I am so in love with this cauliflower “alfredo”!!!!!!! I literally lick my bowl and spoon every time I eat it – yes, it is THAT good!!! I think it’s the perfect creamy to satisfy the “cream” texture that usually is made true by cream and butter. Cauliflower is seriously my new favorite veggie and it is so versatile. I can’t believe I am just gobbling down cauliflower – shame on me for hating it when I was a kid! But omg I can’t believe cauliflower can be made into vegan pasta sauces, cauliflower rice, Raw Cauliflower Tabbouleh, and creamy vegan soups!!! I can’t wait to try more things with this beautiful vegetable!!! You can serve this creamy cauliflower with traditional things too like in place of starchy mashed potatoes or serve it as a creamy sauce with anything and everything. Trust me it is super duper good. I will be making this obsessively from now on. Okay, enough with my raving – here it is!!!

An Endive Flower (Modified Chicken Lettuce Wraps)!

Today was a good day! I went back to Club Pilates and did a session and basically did not know what I was doing since I haven’t gone since August and they added a bunch of new and cool stuff! Like the stretchy bar thing along the walls for sit-ups, the big stepping stool thing that some people need to use the balancing stick for, new exercises like planking on the bouncy ball thing, and new teachers! I was off to a bad start when my hair tie broke on my way there so my long hair was all over my face and eyes as I was doing on the exercises. I totally made it a point to talk to the teacher after to make sure she didnt think I was an amateur in a Level 2 class hahah But it was really fun and I enjoyed all the new exercises. I still hate planking though but I really should do it more often! After pilates, I went to LF for their sale and emerged with 6 sweaters and a flannel. I love their winter sales more than the summer sales- last winter, I got a bunch of my favorite pieces during it, also spending like $150+. Good thing tomorrow it is supposed to rain in SD so I can hopefully wear my new chunky sweaters! But mostly I know these sweaters are for SF weather when I am finally back. Look at my haul!
