Breakfast – the most important meal of the day! Since I work now, I try to eat a large and healthy breakfast, and then snack through company food throughout the day. For dinner, I try to eat a big salad to offset my food offerings of the day. It is already fall and another year has gone by without achieving the elusive flat stomach – but now I’ve got coworkers who want to motivate each other to lose the fat! More pressure = more success? I hope so!
On another note, I can’t wait to maybe have a kitchen again so I can start creating for fall recipes! Stay tuned!
Ingredients
3 cups all-purpose flour
3 tbsp granulated sugar
3 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
3 cups buttermilk
1/2 cup milk
3 eggs
1/3 cup butter, melted
1. In a large bowl, mix together flour, sugar, baking powder, baking soda, and salt.
2. In a separate bowl, mix together buttermilk, milk, eggs, and melted butter.
3. Mix the dry ingredients with the wet ingredients until just mixed through (there will be small clumps of flour left – that’s ok – see pic below). Don’t overmix or the pancakes will be tough!!
4. Heat a pan to med-high heat and drop spoonfuls of pancake batter. Let brown on both sides for about 2-4 min each side, depending on your pan.
5. Serve!!!
